Preheat your oven to 325°F (160°C) and line two baking sheets with parchment paper.

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined and set aside.

In a separate bowl, using a hand or stand mixer, beat the egg whites and salt together until stiff peaks form.

Gently fold the beaten egg whites into the coconut mixture until fully incorporated.
