📝 Instructions

7 steps
1

Rinse the quinoa under cold water using a fine mesh strainer. Combine the quinoa and water in a medium saucepan, bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the quinoa is fully cooked and the water is absorbed. Let it cool to room temperature.

2

Meanwhile, steam or blanch the broccoli florets until tender. Chop them finely and set them aside to cool.

3

In a large mixing bowl, combine the cooked quinoa, chopped broccoli, shredded cheddar cheese, parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and black pepper. Mix well until the mixture holds together when pressed.

4

Shape the mixture into small patties, about 2 inches in diameter and 1/2 inch thick. You should have around 10 patties.

5

Heat 1-2 tablespoons of olive oil in a large nonstick skillet over medium heat. Add the patties in batches, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.

6

Remove the patties from the skillet and place them on a plate lined with paper towels to absorb any excess oil. Repeat with the remaining patties, adding more olive oil to the skillet as needed.

7

Serve the patties immediately with your favorite dipping sauce, or let them cool and store them in an airtight container in the refrigerator for up to 3 days. To reheat, warm them in a skillet or oven until heated through.
