In a medium-sized pot, bring the water and salt to a boil.
Gradually whisk in the grits to avoid clumps. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.
Once the grits are tender, remove from heat and stir in butter and shredded cheddar cheese until completely melted and smooth. Set aside and keep warm.
In a large skillet, heat olive oil over medium heat.
Add the smoked sausage slices and cook until browned on both sides, about 3-4 minutes. Remove sausage from the skillet and set aside.
In the same skillet, add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp and set aside with the sausage.
Add the diced onion, bell pepper, and garlic to the skillet. Sauté for 4-5 minutes until softened.
Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the skillet.
Add the heavy cream, paprika, and cayenne pepper (if using). Stir well and simmer for 3-5 minutes until the sauce begins to thicken slightly.
