Bring a large pot of salted water to a boil.

Carefully peel off 10 to 12 large cabbage leaves from the head and blanch them in the boiling water for 2-3 minutes until softened. Transfer to a plate to cool slightly.

In a skillet, heat 1 tablespoon of butter over medium heat and sauté the chopped onion until soft and translucent. Let it cool slightly.

In a large bowl, combine the ground beef, ground pork, cooked rice, sautéed onion, egg, milk, allspice, salt, and black pepper. Mix until well incorporated.

Lay out a cabbage leaf on a flat surface. Place 2-3 tablespoons of the filling in the center of the leaf. Fold in the sides and roll up tightly, forming a small parcel. Repeat with the remaining leaves and filling.

Heat the remaining butter in a large oven-proof skillet over medium heat. Brown the cabbage rolls seam-side down for 2-3 minutes, then flip and brown the other sides. Remove them from the skillet and set aside.

In the same skillet, sprinkle the flour into the butter and whisk for 1 minute. Slowly add the beef stock, whisking constantly to remove lumps. Stir in the cream and soy sauce, and bring the mixture to a simmer.

Return the cabbage rolls to the skillet, seam-side down. Spoon some of the sauce over them and transfer the skillet to the oven.

Bake for 35-40 minutes, basting the rolls with the sauce halfway through cooking.
