Preheat your oven to 375Β°F (190Β°C).
In a small bowl, combine the diced grape tomatoes, chopped basil, minced garlic, balsamic vinegar, and 1 tablespoon of olive oil. Mix well and set aside.
Place the chicken breasts on a cutting board and carefully cut a pocket into the side of each breast without slicing all the way through.
Stuff each pocket with about 2β3 tablespoons of the tomato mixture and a generous portion of fresh mozzarella cheese.
Secure the stuffed chicken breasts with toothpicks to keep the filling in place.
Season the outside of the chicken breasts with salt and black pepper.
In an oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Sear the chicken breasts for 2β3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20β25 minutes, or until the chicken reaches an internal temperature of 165Β°F (74Β°C).
Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with more fresh basil, if desired.
Serve hot and enjoy!
