Grate the zucchini using the large holes of a box grater. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess water as possible.
Finely chop the ham into small pieces and roughly chop the basil leaves.
In a large mixing bowl, combine the grated zucchini, chopped ham, basil leaves, ricotta cheese, all-purpose flour, eggs, grated parmesan cheese, baking powder, salt, and black pepper. Mix until evenly combined.
Heat a large non-stick skillet over medium heat and add 1 tablespoon of olive oil.
Scoop 2 tablespoons of the zucchini batter for each fritter and place them into the skillet, gently flattening each scoop with the back of a spoon to form a fritter shape.
Cook the fritters for 3-4 minutes on one side, or until golden brown. Carefully flip and cook for another 3-4 minutes on the other side until fully cooked and golden.
