Soak bamboo skewers in water for at least 30 minutes to prevent burning during grilling.
Cut the chicken thighs into bite-sized pieces, approximately 1 to 1.5 inches in size.
In a small saucepan, combine soy sauce, mirin, sake, sugar, and minced garlic. Bring the mixture to a gentle boil over medium heat, stirring until the sugar is dissolved. Reduce the heat and simmer for 5-7 minutes, until the sauce thickens slightly. Remove from heat and allow to cool.
Thread the chicken pieces onto the soaked skewers, leaving a little space between each piece to ensure even cooking.
Brush each skewer lightly with vegetable oil to prevent sticking during grilling.
