Heat a large skillet over medium heat and add the olive oil.
Add the finely chopped yellow onion and green bell pepper to the skillet, and sauté for 3-4 minutes until softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Push the vegetables to one side of the skillet and add the ground moose meat to the other side. Cook for 5-7 minutes, breaking the meat into small crumbles with a wooden spoon, until it is browned and fully cooked through.
Combine the cooked vegetables with the browned meat and reduce the heat to low.
Stir in the tomato paste, coating the meat and vegetables evenly.
Add the ketchup, Worcestershire sauce, brown sugar, apple cider vinegar, smoked paprika, chili powder, salt, and black pepper. Mix thoroughly and let the mixture simmer for 10-12 minutes, stirring occasionally, to develop the flavors and thicken the sauce.
While the sloppy joe filling simmers, optionally toast the hamburger buns. Spread a small amount of butter on each cut side of the buns and toast them on a skillet or grill over medium heat until golden brown.
Spoon the hot moose sloppy joe mixture onto the bottom half of each bun, then add the top bun. Serve immediately and enjoy!
