📝 Instructions

17 steps
1

Preheat your oven to 180°C (350°F).

2

In a medium bowl, combine the all-purpose flour and granulated sugar.

3

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

4

Add the egg yolk and ice water to the flour mixture, one tablespoon at a time, and mix until the dough comes together. Do not overwork the dough.

5

Wrap the dough in plastic wrap and refrigerate for 15 minutes.

6

On a lightly floured surface, roll out the chilled dough to about 3-4mm thickness. Cut circles slightly larger than your tart tins.

7

Press the dough circles into your tart tins, trimming off any excess dough.

8

Prick the bottoms of the tart shells with a fork and bake in the preheated oven for 15-20 minutes or until golden brown. Let them cool completely.

9

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

10

Pour the hot cream over the white chocolate chips in a heatproof bowl. Let sit for 1-2 minutes, then stir until smooth.

11

Stir in the vanilla extract, then let the white chocolate filling cool slightly.

12

Once the tart shells are cool, spoon the white chocolate filling into each tart shell, filling them about 3/4 full. Smooth the tops if needed.

13

Refrigerate the tarts for 1-2 hours, or until the white chocolate filling is set.

14

Cut the fresh fruits into bite-sized pieces and arrange them decoratively on top of the set white chocolate filling.

15

In a microwave-safe bowl, mix the apricot jam and water. Microwave for 15-20 seconds until warm and then stir to combine.

16

Using a pastry brush, lightly glaze the tops of the fruit with the apricot mixture to give a glossy finish.

17

Serve immediately or refrigerate until ready to serve. Enjoy your White Chocolate Fruit Tarts!
