Preheat a panini press or a stovetop grill pan over medium heat.
Slice the ciabatta bread in half horizontally and spread 2 tablespoons of pesto sauce on the inside of each half.
Layer 3 ounces of sliced turkey breast on the bottom half of each ciabatta bread.
Add 2 ounces of mozzarella cheese slices on top of the turkey.
Place a few slices of tomato and a handful of fresh spinach leaves on top of the cheese layer.
Close the sandwich with the top half of the ciabatta bread.
Brush the outside of each sandwich lightly with olive oil on both sides.
Place the sandwich on the preheated panini press or grill pan. Press down lightly and cook for 3 to 5 minutes, or until the bread is golden and crispy, and the cheese is melted. If using a grill pan, use a spatula or another pan to press the sandwich down.
Remove the panini from the press or pan and let it cool slightly before slicing in half.
Serve immediately and enjoy your Turkey Pesto Panini!
