Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Thaw the puff pastry sheets according to package instructions, usually about 15-20 minutes.

Slice the cherry tomatoes in half and place them in a small mixing bowl. Add a pinch of salt and black pepper, along with 1 tablespoon of olive oil, and toss to coat.
