Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Lightly dust your countertop with flour and roll out the puff pastry sheet to about 1/8-inch thickness. Using a 3-inch round cookie cutter, cut out circles from the dough and place them on the prepared baking sheet.
With a smaller circular cutter or the tip of a knife, lightly score a smaller circle inside each puff pastry round without cutting all the way through. This will form a border for the tartlets.
