  • 2 tablespoons Olive oil

  • 125 ml Heavy cream
  • 125 ml Chicken broth

  • 1 large, lightly beaten Egg
  • 1 tablespoon (for dusting) All-purpose flour

Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

Add the diced chicken breast to the skillet. Cook until the chicken is no longer pink, about 5-6 minutes.

On a lightly floured surface, roll out the puff pastry sheets. Cut each sheet into 4 equal squares.

Place a generous spoonful of the chicken filling in the center of 4 of the pastry squares. Leave a small border around the edges.

Brush the edges of the filling squares with beaten egg. Place the remaining 4 squares on top, pressing the edges down to seal. Use a fork to crimp and reinforce the edges.

Carefully transfer the sealed parcels to the prepared baking tray. Poke a small slit on top of each parcel to allow steam to escape.

Brush the tops with the remaining beaten egg for a golden finish.
