Infused with the vibrant flavors of Thailand, these Thai Lemongrass Tofu Skewers are a perfect balance of zesty, savory, and subtly sweet notes. Marinated in a fragrant blend of lemongrass, garlic, fresh ginger, soy sauce, lime juice, and coconut milk, the tofu cubes soak up an explosion of flavor before being perfectly grilled to golden perfection. With their slight char and tender texture, these plant-based skewers are ideal for summer barbecues, weeknight dinners, or as a crowd-pleasing appetizer. Serve them with a creamy peanut dipping sauce for the ultimate Thai-inspired culinary experience. Easy to prepare, naturally vegan, and bursting with aromatic goodness, these skewers are proof that meat-free grilling can be just as satisfying.
Drain and press the tofu to remove excess moisture. Cut the tofu into 1-inch cubes and set aside.
Peel and finely chop the lemongrass stalks, garlic, and ginger. Alternatively, you can use a food processor for a finer texture.
In a medium bowl, whisk together the chopped lemongrass, garlic, ginger, soy sauce, maple syrup, lime juice, sesame oil, coconut milk, and red chili flakes to create the marinade.
Place the tofu cubes in a shallow dish or resealable bag and pour the marinade over them. Toss to coat evenly. Marinate in the refrigerator for at least 1 hour, or up to overnight for more flavor.
While the tofu marinates, soak the bamboo skewers in water for 30 minutes to prevent them from burning during grilling.
Remove the tofu from the marinade and thread the cubes onto the soaked skewers, leaving a little space between each piece for even grilling.
Heat a grill pan or outdoor grill over medium heat and lightly brush with oil to prevent sticking.
Grill the tofu skewers for 2-3 minutes on each side, or until they are golden brown and slightly charred. Baste with any remaining marinade during grilling for extra flavor.
Remove the skewers from the heat and transfer them to a serving platter. Garnish with freshly chopped cilantro.
Serve the skewers hot with peanut dipping sauce on the side, if desired.
