Preheat your oven to 375Β°F (190Β°C) and grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess grease.
Add the diced onion and minced garlic to the skillet and sautΓ© for 2-3 minutes until softened and fragrant.
Stir in the taco seasoning, diced tomatoes with green chilies, tomato sauce, black beans, and frozen corn. Let the mixture simmer for 5 minutes to meld flavors.
Spread a thin layer of the beef mixture on the bottom of the prepared baking dish.
Place half of the frozen cheese ravioli in a single layer over the beef mixture.
Spoon half of the remaining beef mixture over the ravioli, then sprinkle 1 cup of the shredded Mexican blend cheese on top.
Repeat the layers with the remaining ravioli, beef mixture, and 1 cup of cheese.
Cover the dish tightly with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake uncovered for an additional 10-15 minutes, or until the casserole is hot and bubbly, and the cheese is melted and slightly golden.
Remove from the oven and let it cool for 5 minutes before serving.
Optionally, top with sour cream, sliced green onions, and chopped cilantro for garnish.
