Place the prawns in a food processor and pulse until roughly chopped. Be careful not to over-process; you want texture, not a paste.
Transfer the chopped prawns to a large mixing bowl. Add the minced garlic, chopped red chilli, spring onions, coriander, sweet chilli sauce, fish sauce, panko breadcrumbs, cornflour, and the beaten egg. Mix everything together until well combined.
Using your hands, divide the mixture into 8 equal portions and shape each into a small patty. Place the patties on a plate and refrigerate for 15 minutes to firm up.
Heat the vegetable oil in a large nonstick frying pan over medium heat. Once the oil is hot, add the prawn cakes to the pan. Cook for 3β4 minutes on each side, or until golden and cooked through.
Remove the cakes from the pan and drain on kitchen paper to remove excess oil.
