📝 Instructions

8 steps
1

Rinse the glutinous rice under cold water multiple times until the water runs clear, then soak it in water for at least 4 hours, or preferably overnight.

2

Drain the soaked rice and transfer it to a steamer lined with cheesecloth or a fine-mesh sieve. Steam over boiling water for 25–30 minutes, or until the rice is tender and sticky.

3

While the rice is steaming, prepare the coconut sauce by combining the coconut milk, sugar, and salt in a small saucepan. Heat gently over medium-low heat, stirring constantly, until the sugar and salt dissolve. Do not boil.

4

Once the rice is cooked, transfer it to a heatproof bowl. Gradually pour about 3/4 of the coconut sauce over the hot rice, stirring gently to coat evenly. Cover and let the rice absorb the sauce for 15 minutes.

5

Peel the mangoes and slice them into thin wedges or cubes. Set aside.

6

Zest and juice the lime. Add the zest to the remaining coconut sauce for extra flavor. Reserve the juice for optional sprinkling over the mango slices if desired.

7

To serve, scoop a portion of the sticky rice onto a plate or serving dish. Arrange mango slices on the side. Drizzle with the remaining coconut sauce and sprinkle with toasted sesame seeds if using.

8

For a zesty finish, add a small squeeze of lime juice over the mango and rice just before serving.
