📝 Instructions

9 steps
1

Trim the pork tenderloin of any excess fat and slice it into 1-inch thick medallions. Pat the slices dry with a paper towel.

2

Season the pork medallions on both sides with salt and ground black pepper. Lightly dust each piece with flour, shaking off any excess.

3

Heat a large skillet over medium heat and add the olive oil and 1 tablespoon of butter. Once the butter is melted and bubbly, add the pork medallions in a single layer, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side until golden brown and cooked through. Remove the pork from the skillet and set aside on a plate.

4

In the same skillet, add the remaining 1 tablespoon of butter. Toss in the sliced apples and drizzle the lemon juice over them. Sauté the apples for 4-5 minutes until golden and slightly softened. Remove the apples from the skillet and set them aside with the pork.

5

Lower the heat to medium-low and add the minced garlic to the skillet. Stir for about 30 seconds until fragrant.

6

Deglaze the pan by adding the apple cider vinegar, scraping up any browned bits from the bottom of the skillet. Add the maple syrup, chicken broth, and fresh thyme leaves. Stir everything together and let the mixture simmer for 3-4 minutes until it begins to thicken into a glaze.

7

Return the pork medallions and apples to the skillet, turning the medallions to coat them in the glaze. Cook for another 2-3 minutes until everything is heated through and well-coated in the sticky glaze.

8

Taste and adjust seasoning with more salt or pepper if needed.

9

Serve the Sticky Maple Pork with Apples immediately, garnished with additional fresh thyme if desired. Pair with mashed potatoes, rice, or roasted vegetables for a complete meal.
