Take the ribeye steak out of the fridge and let it come to room temperature, about 20 minutes.
Thinly slice the ribeye steak into strips and season with salt and black pepper. Set aside.
Slice the yellow onion and bell pepper into thin strips.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, for 8-10 minutes until soft and caramelized. Remove from skillet and set aside.
