Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
Add the spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.
In a mixing bowl, combine cream cheese, crumbled feta cheese, cooked spinach, salt, and black pepper. Mix well until fully incorporated.
Roll out the puff pastry sheets on a floured surface. Divide each sheet into 4 equal rectangles.
Spoon about 2 tablespoons of the spinach mixture onto one end of each rectangle, then roll tightly into a log.
Place the spinach rolls seam-side down on the prepared baking sheet.
In a small bowl, beat the egg and brush it over the tops of the rolls. Sprinkle with sesame seeds.
Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and puffed up.
Remove from the oven and allow to cool slightly before serving. Enjoy your spinach rolls as a snack or appetizer!
