  • 250 grams Fresh spinach, washed and chopped
  • 200 milliliters Heavy cream
  • 50 grams Grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 3 liters Water (for boiling pasta)

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.

3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, stirring to prevent burning.

4. Add the chopped spinach to the skillet and cook for 3-4 minutes, stirring occasionally, until wilted and reduced in volume.

5. Reduce the heat to low and pour in the heavy cream. Stir well to combine with the spinach, letting it simmer for 2-3 minutes.

6. Stir in half of the grated Parmesan cheese, and season with salt, black pepper, and red pepper flakes if using. Mix until the cheese is melted and the sauce is smooth.

7. Add the cooked pasta to the skillet, tossing to coat each strand in the creamy spinach sauce. If the sauce is too thick, add a tablespoon or two of the reserved pasta water to loosen it.
