Preheat your oven to 375Β°F (190Β°C) and spray a 9x13-inch baking dish with cooking spray.

Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. Drain and lay the noodles flat on a sheet of parchment paper to prevent sticking.

In a large mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, parmesan cheese, drained spinach, egg, salt, pepper, garlic powder, and Italian seasoning. Mix until well combined.

Spread 1/3 cup of the marinara sauce evenly over the bottom of the prepared baking dish.

Lay each lasagna noodle flat and spread about 3 tablespoons of the spinach-ricotta mixture evenly over the surface of the noodle.

Once all the noodles are rolled and arranged in the baking dish, pour the remaining marinara sauce evenly over the rolls.

Sprinkle the remaining 1 cup of mozzarella cheese over the top of the rolls.

Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for another 20 minutes, until the cheese is melted and bubbly.

Let the lasagna rolls rest for 5 minutes before serving. Garnish with additional parmesan cheese or fresh basil, if desired.
