Peel the potatoes and slice them thinly into 1/8-inch slices. Peel the onion and slice it thinly as well.

Heat 3 tablespoons of olive oil in a medium, non-stick frying pan over medium heat. Add the potatoes and onions, stirring occasionally. Cook for 15 minutes or until the potatoes are fork-tender but not browned. Add a pinch of salt halfway through cooking.
