Bring a large pot of salted water to a boil.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Season the pork chops on both sides with a pinch of salt and black pepper.
Sear the pork chops in the hot skillet for 3-4 minutes on each side until golden brown, then remove and set aside.
Add the remaining 1 tablespoon of olive oil to the skillet, followed by the minced garlic and chopped onion. Sauté for 2-3 minutes until fragrant and softened.
