πŸ“ Instructions

11 steps
1

Prepare the rice vermicelli noodles according to the package instructions. Drain and set aside.

2

Slice the red roasted pork (char siu) into thin strips and set aside.

3

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until just set, then remove from the wok and set aside.

4

Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic, ginger, and sliced onion. Stir-fry for 1 minute until fragrant.

5

Add the red and green bell peppers, along with the snow peas. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.

6

Push the vegetables to one side of the wok. Add the curry powder to the empty side of the wok and toast for 30 seconds until fragrant.

7

Return the cooked noodles to the wok, along with the scrambled eggs and sliced red roasted pork.

8

Pour in the soy sauce, oyster sauce, sesame oil, and sprinkle with white pepper. Toss everything together to evenly coat the noodles and ingredients in the sauce and spices.

9

Cook for another 2-3 minutes, stirring frequently, until the noodles are heated through and evenly mixed.

10

Remove from heat and garnish with sliced green onions and fresh cilantro leaves.

11

Serve hot with lime wedges on the side for a zesty finishing touch.
