Drain the tofu and press it between two plates to remove excess moisture for 10 minutes. Crumble the tofu into small pieces and set aside.
Chop the shiitake mushrooms finely and mince the garlic and ginger. Slice the green onions thinly.
Heat 1 teaspoon of vegetable oil in a skillet over medium heat. Add the mushrooms and cook for 5 minutes, stirring frequently, until softened and browned.
Add the crumbled tofu, garlic, ginger, soy sauce, sesame oil, salt, and black pepper to the skillet. Cook for 3 additional minutes, stirring well, until the mixture is fragrant and slightly dry. Remove from heat and let the filling cool.

Repeat the process with the remaining filling and wrappers, placing the completed pot stickers on a tray lined with parchment paper.
Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Arrange the pot stickers in a single layer in the skillet, flat side down. Cook for 2-3 minutes until the bottoms are golden brown and crisp.
Carefully add 1/4 cup of water to the skillet and immediately cover with a tight-fitting lid. Steam the pot stickers for 4 minutes, or until the wrappers are cooked through and translucent.
Remove the lid and let any remaining water evaporate. Let the pot stickers cook for 1 additional minute to regain their crisp bottoms.
