  • 1 cup Dry white wine

Bring a large pot of salted water to a boil. Cook the angel hair pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Pat the scallops dry with paper towels and season both sides with salt and black pepper.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until the butter is melted and the mixture is hot.

Add the scallops to the skillet in a single layer and sear undisturbed for 2-3 minutes on each side until browned and cooked through. Remove the scallops from the skillet and set aside.

In the same skillet, reduce the heat to medium and add the remaining olive oil and butter. Once melted, add the minced garlic and cook for 1 minute until fragrant.

Add the drained angel hair pasta to the skillet and toss to coat in the sauce. Return the scallops to the skillet and gently combine to rewarm.
