Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
Add the sausage links to the skillet and cook for 6-8 minutes, turning occasionally, until fully cooked and browned. Remove the sausage links from the skillet and set them aside on a plate.
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced bell peppers and red onion to the skillet. Sauté for 4-5 minutes until the vegetables are softened.
Add the fresh spinach to the skillet and cook for an additional 1-2 minutes until wilted. Season the vegetables with salt, black pepper, and paprika. Remove the vegetables from the skillet and set aside.
Wipe the skillet clean with a paper towel. Heat the skillet over low-medium heat and lightly grease with a small amount of olive oil or cooking spray.
