Peel the potatoes and place them in a large pot of cold, salted water.
Bring the water to a boil, reduce heat, and simmer the potatoes for 8-10 minutes until they are slightly tender but not fully cooked.
Drain the potatoes and allow them to cool completely. You can refrigerate them for at least 30 minutes or overnight for easier grating.
Using the largest holes of a box grater, grate the cooled potatoes into shreds. Transfer the grated potatoes to a large mixing bowl and season with 1 teaspoon of salt and freshly ground black pepper. Toss gently to combine.
