Elevate your Greek salad game with this irresistible Roasted Garlic and Sun-Dried Tomato Dressing, bursting with Mediterranean flavors! This creamy, tangy dressing blends the rich sweetness of oven-roasted garlic with the umami kick of sun-dried tomatoes, brightened by zesty lemon juice and a touch of honey. Infused with classic Greek staples like red wine vinegar and dried oregano, it's perfectly balanced with Dijon mustard for depth and just the right amount of seasoning. Quick to make with minimal prep time, this homemade dressing transforms simple salads into gourmet creations. Perfect for drizzling over crisp cucumbers, juicy tomatoes, and tangy feta, it's a must-try for lovers of fresh, vibrant flavors and Mediterranean cuisine.
Preheat your oven to 400°F (200°C).
Slice off the top of the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven for 30 minutes or until the garlic is soft and golden.
Let the roasted garlic cool slightly, then squeeze the cloves out into a blender or food processor.
Add the sun-dried tomatoes, red wine vinegar, lemon juice, Dijon mustard, dried oregano, honey, salt, and black pepper to the blender.
Pour the remaining 5 tablespoons of olive oil and the 2 tablespoons of water into the blender.
Blend until smooth and creamy. If the dressing is too thick, add a bit more water, one teaspoon at a time, until you reach your desired consistency.
Taste and adjust seasoning as needed.
Store the dressing in an airtight container in the refrigerator for up to 5 days.
Drizzle over your favorite Greek salad and serve!
