Rich, creamy, and packed with bold, savory flavor, this Roasted Garlic and Buttermilk Salad Dressing is a must-try for elevating any dish. Roasting a whole head of garlic until golden and caramelized infuses the dressing with a luscious, mellow sweetness that perfectly complements the tangy buttermilk, creamy Greek yogurt, and zesty Dijon mustard. A touch of honey balances the flavors, while freshly squeezed lemon juice brightens the mix. Whether drizzled over crisp greens, roasted vegetables, or used as a dipping sauce, this versatile dressing is a crowd-pleasing addition to your repertoire. Plus, it's easy to make and can be stored in the fridge, making it perfect for meal prep. Don't forget the optional chopped chives for a fresh, herby finish!
Preheat your oven to 400°F (200°C).
Slice off the top of the garlic head to expose the tops of the cloves. Place the garlic head on a small sheet of aluminum foil, drizzle with olive oil, and wrap tightly.
Roast in the preheated oven for 30 minutes, or until the garlic cloves are soft and golden brown. Remove from the oven and allow to cool.
Once cooled, squeeze the roasted garlic cloves out of their skins into a mixing bowl, discarding the skins.
Mash the roasted garlic with a fork to form a paste.
Add the buttermilk, mayonnaise, Greek yogurt, lemon juice, Dijon mustard, honey, salt, and black pepper to the bowl with the garlic paste. Whisk until smooth and fully combined.
Taste and adjust seasoning as needed, adding more salt or lemon juice, if desired.
If using, fold in finely chopped chives for an extra layer of flavor.
Transfer the dressing to a jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld together.
Serve chilled over salads, roasted vegetables, or as a dipping sauce. Shake or stir before using.
