Preheat your oven to 400°F (200°C).
Wash and trim the beets, wrapping each one individually in aluminum foil. Place the wrapped beets onto a baking sheet and roast in the oven for 40-50 minutes, or until they are fork-tender.
While the beets are roasting, thinly slice the baguette into 1/2-inch rounds. Arrange the slices on a baking sheet and drizzle them lightly with 1 tablespoon of olive oil.
