Remove the outer leaves of the red cabbage, then cut it into quarters. Remove the core from each quarter and thinly slice the cabbage.
Peel and core the apples, then cut them into thin slices.
Peel the onion and finely slice it.
In a large pot or Dutch oven, melt the butter over medium heat.
Add the sliced onion to the pot and sauté for 3-4 minutes, until softened and translucent.
Stir in the sliced red cabbage and cook for another 5 minutes, stirring occasionally to combine.
Add the apple slices to the pot, followed by the apple cider vinegar, brown sugar, water, ground cinnamon, ground cloves, salt, and black pepper. Stir well to combine all the ingredients.
Cover the pot with a lid, reduce the heat to low, and let the mixture simmer for 45-50 minutes, stirring occasionally. Add a little more water if the mixture starts to stick to the bottom of the pot.
Taste and adjust the seasoning with more salt or vinegar if desired.
Serve warm as a side dish with roast meats, sausages, or alongside potatoes. Enjoy!
