📝 Instructions

10 steps
1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2

Wash and scrub the potatoes thoroughly and pat them dry. Pierce each potato a few times with a fork.

3

Rub the potatoes with olive oil and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place them on the prepared baking sheet.

4

Bake the potatoes in the preheated oven for 30-35 minutes, or until they are tender when pierced with a knife. Remove them from the oven and let them cool for 10 minutes until they can be handled.

5

Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving a thin layer of potato inside the skin. Reserve the scooped-out potato flesh for another use (e.g., mashed potatoes).

6

Brush the inside of each potato skin with a little more olive oil, then sprinkle with the remaining salt, black pepper, and garlic powder.

7

Place the potato skins back onto the baking sheet, hollow side up, and bake for 7-10 minutes until the edges are crisp.

8

Remove the skins from the oven and fill each skin with shredded cheddar cheese and crumbled bacon. Return to the oven for another 5-7 minutes, or until the cheese is melted and bubbling.

9

Once the skins are out of the oven, top each with a dollop of sour cream and a sprinkle of green onions.

10

Serve immediately and enjoy your delicious Potato Skin Poppers!
