Pat the pork loin dry with paper towels and season it evenly with salt and black pepper.

Heat 2 tablespoons of olive oil in a large, oven-safe skillet over medium-high heat. Once hot, sear the pork loin on all sides until a golden crust forms, about 2-3 minutes per side.

Remove the pork loin from the skillet and set it aside on a plate.
