Preheat your oven to 200°C (392°F) and line a baking tray with parchment paper.
In a large mixing bowl, combine the self-raising flour and butter. Using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.
Make a well in the center of the mixture and gradually pour in the milk. Stir with a spoon until a dough forms.
Transfer the dough to a lightly floured surface and knead gently for about 1 minute or until it is smooth.
Roll the dough out into a rectangle roughly 30x25 cm (12x10 inches) in size.
Spread the pizza sauce evenly over the dough, leaving a small border around the edges.
Sprinkle the shredded mozzarella cheese on top of the sauce, followed by the sliced pepperoni. Finish with a sprinkling of dried Italian herbs.
Starting from one of the long edges, roll the dough up tightly into a log shape.
