Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a medium skillet over medium heat, add the olive oil and minced garlic. Cook for 1 minute until fragrant.
Add the ground Italian sausage to the skillet, breaking it up with a spatula. Cook for 5–7 minutes until the sausage is browned and fully cooked. Drain excess fat if needed.
Add the baby spinach leaves to the skillet with the sausage. Stir and cook for 2–3 minutes until the spinach is wilted. Season with salt and pepper. Remove from heat and let it cool slightly.
Lightly flour a clean surface and roll out the pizza dough into a large rectangle, roughly 12 inches by 8 inches.
Spread the sausage and spinach mixture evenly over the rolled-out dough, leaving a 1-inch border on all sides.
