Season both sides of the pork chops with salt, black pepper, and paprika. Set aside.
Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter to the pan.
Once the butter is melted and the skillet is hot, add the pork chops. Sear them for 3-4 minutes on each side until golden brown. Remove the pork chops from the pan and set them aside on a plate.
Reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet, then add the sliced onion. Cook for 5 minutes, stirring occasionally, until the onions are soft and slightly caramelized.
Stir in the garlic and cook for 1 minute until fragrant.
Carefully pour in the whiskey and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the whiskey simmer for about 1-2 minutes to reduce slightly.
Pour in the chicken broth and stir to combine. Bring the mixture to a simmer.

Return the pork chops to the pan, spooning the sauce over them, and cook for an additional 1-2 minutes to meld the flavors.
