Finely shred the cabbage to make 2 cups. Peel and grate the carrots to make 1 cup. Rinse and drain 1 cup of bean sprouts. Finely chop the green onions and mince the garlic cloves.

In a large mixing bowl, combine the cabbage, carrot, bean sprouts, green onions, and garlic.

Add soy sauce, sesame oil, salt, and black pepper to the vegetables. Mix well to make sure all ingredients are combined.

Lay a spring roll wrapper on a clean surface, with one corner pointing towards you (like a diamond shape). Keep the remaining wrappers covered with a damp cloth to prevent them from drying out.

Place about 1 tablespoon of the vegetable filling near the corner closest to you. Fold the corner over the filling, then fold in the sides, and roll tightly to the opposite corner. Seal the edge with a little water. Repeat with remaining wrappers and filling.
