In a large pan over medium heat, add ground pork and cook until browned. Drain excess fat.
Add minced garlic to the pan and sauté until fragrant, about 1 minute.
Stir in shredded carrot, cabbage, bean sprouts, and green onions. Cook for 3-4 minutes until vegetables are tender-crisp.
Add soy sauce, oyster sauce, salt, and ground black pepper to the mixture. Stir well to combine and remove from heat. Allow the filling to cool slightly.
Place a spring roll wrapper on a flat surface in a diamond position. Spoon about 1 to 2 tablespoons of the filling near the corner closest to you.
Fold the corner over the filling, then fold the side corners in and roll tightly towards the top corner.
Brush the top corner with beaten egg to seal the roll. Repeat with remaining wrappers and filling.
In a deep pan, heat vegetable oil to 180°C (350°F). Carefully add spring rolls to the oil, a few at a time, and fry until golden brown and crisp, about 3-4 minutes per batch.
Remove from oil and drain on a plate lined with paper towels. Serve hot with your favorite dipping sauce.
