No candy thermometer? No problem! This microwave-friendly recipe simplifies the candy-making process, making it accessible for beginners and pros alike. Great for gifting, holiday treats, or satisfying your cravings on the spot, these melt-in-your-mouth pralines deliver classic homemade goodness with minimal effort.
Line a baking sheet or large piece of countertop with parchment paper or a silicone baking mat, and set aside.
In a large microwave-safe bowl, combine the granulated sugar, brown sugar, salt, evaporated milk, and butter. Stir well to combine.
Place the bowl in the microwave and cook on high for 3 minutes. Carefully remove and stir the mixture well.
Return the bowl to the microwave and cook for another 3 minutes. Remove the bowl again and stir thoroughly. Be cautious, as the mixture will be very hot.
Microwave the mixture for an additional 1–2 minutes, or until it reaches 238–240°F (soft-ball stage) on a candy thermometer. If you don’t have a thermometer, the mixture should thicken and become bubbly.
Remove the bowl from the microwave, and immediately stir in the vanilla extract and pecans. Mix quickly but thoroughly, as the mixture will start to cool and harden.
Using a spoon, drop heaping spoonfuls of the praline mixture onto the prepared parchment paper or silicone mat, spacing them out so they don’t touch.
Allow the pralines to cool and harden completely at room temperature, about 20–30 minutes.
Once set, transfer the pralines to an airtight container for storage or enjoy immediately!
