Preheat your oven to 200°C (400°F).
Prepare the cauliflower by removing the green leaves and cutting the head into large florets. Rinse under cold water and pat dry.
Spread the cauliflower florets onto a large baking tray. Drizzle with 2 tablespoons of olive oil, and season with a pinch of salt and pepper. Toss to coat evenly.
Roast the cauliflower in the preheated oven for 20 minutes or until tender and slightly golden on the edges. Remove and set aside.
While the cauliflower roasts, heat the remaining 2 tablespoons of olive oil in a large pan over medium heat.
Add the chopped onion to the pan and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
Stir in the canned crushed tomatoes, tomato paste, water, dried oregano, dried thyme, salt, and black pepper. Mix well and bring the sauce to a gentle simmer. Cook for 10 minutes, stirring occasionally, until the sauce thickens slightly.
Transfer the roasted cauliflower into a lightly greased baking dish. Pour the tomato sauce evenly over the cauliflower.
Sprinkle the crumbled feta cheese over the top of the dish.
Place the baking dish into the oven and bake for 20 minutes, or until the tomato sauce is bubbling and the feta is slightly golden.
Remove the dish from the oven and let it rest for 5 minutes. Garnish with the freshly chopped parsley before serving.
Serve warm as a main dish or as a side to grilled proteins or crusty bread.
