Wash and scrub the red potatoes, then chop them into 1-inch cubes. Set aside.
Slice the kielbasa into 1/4-inch rounds. Set aside.
Core and seed the bell peppers, then slice them into thin strips. Peel the onion and slice it into half-moons. Mince the garlic cloves.
In a large skillet or sauté pan, heat 2 tablespoons of olive oil over medium heat.
Add the cubed potatoes to the skillet. Cook for 8-10 minutes, stirring occasionally, until the potatoes are golden brown and slightly tender. Remove the potatoes from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté for 5-7 minutes or until they begin to soften and caramelize.
Stir in the minced garlic, smoked paprika, and dried oregano. Cook for 1 additional minute until fragrant.
Push the vegetables to one side of the skillet, then add the sliced kielbasa to the other side. Cook for 3-4 minutes, stirring occasionally, until the sausage is browned on both sides.
Return the cooked potatoes to the skillet and toss everything together. Season with salt and black pepper, adjusting to taste.
Lower the heat to medium-low and cook for another 5 minutes, stirring occasionally, to allow the flavors to meld and the potatoes to finish cooking.
Optional: Garnish with chopped parsley before serving. Serve hot and enjoy!
