📝 Instructions

10 steps
1

Remove the casings from the Italian sausage links, if necessary.

2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it into small pieces, until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.

3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and sauté for 2-3 minutes until softened.

4

Add the minced garlic and cook for 1 minute until fragrant.

5

Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and black pepper. Bring the sauce to a gentle simmer and let it cook for 10 minutes, stirring occasionally.

6

Meanwhile, bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta.

7

Return the cooked sausage to the skillet with the tomato sauce and mix well. If the sauce is too thick, stir in a little of the reserved pasta water to reach your desired consistency.

8

Add the cooked penne pasta to the skillet and toss until the pasta is evenly coated with the sauce.

9

Remove from heat and stir in grated parmesan cheese.

10

Garnish with chopped fresh parsley and serve immediately with additional parmesan cheese on the side, if desired.
