Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage links and cook for 4–5 minutes per side, or until browned. Remove from the skillet and set aside. (The sausages do not need to be fully cooked at this stage.)

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onion. Sauté for 6–7 minutes, stirring occasionally, until softened.

Add the minced garlic to the skillet and sauté for an additional 1 minute, until fragrant.

Add the crushed tomatoes, oregano, basil, red pepper flakes (if using), salt, and black pepper to the skillet. Stir to combine and bring the mixture to a simmer.

Slice the browned sausages into 1-inch pieces and return them to the skillet. Push them into the tomato mixture so they are mostly submerged.

Reduce the heat to low and let the skillet simmer, uncovered, for 15–20 minutes, stirring occasionally, until the sausages are cooked through and flavors are well developed.
