Heat 1 tablespoon of olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat.

Slice the Italian sausages into 1-inch pieces. Brown the sausage pieces on all sides until cooked through, about 5 minutes. Remove them from the pot and set aside.

Deglaze the pot by pouring in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2 minutes to reduce slightly.

Add the crushed tomatoes, beef broth, oregano, basil, bay leaves, salt, and pepper to the pot. Stir to combine.

Return the browned beef and sausage to the pot, along with the diced potatoes.

Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer gently for 90 minutes, stirring occasionally.

Check the tenderness of the beef and potatoes. If the beef is not tender, continue simmering, covered, for another 15-20 minutes.

Remove and discard the bay leaves. Stir in the fresh parsley just before serving.
