Peel the potatoes (if desired) and cut them into thin wedges or small chunks. Set aside.

Slice the bell peppers and onion into thin strips. Mince the garlic.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the potato wedges, season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, and cook until golden brown and crispy, about 12-15 minutes. Stir occasionally to prevent sticking. Remove potatoes from the skillet and set aside on a plate lined with paper towels.
