Preheat your oven to 180Β°C (350Β°F) and line a baking tin (approximately 20cm x 20cm) with parchment paper.
In a large mixing bowl, mash the ripe bananas with a fork until smooth.
Add the runny honey, peanut butter, cinnamon, and vanilla extract to the mashed bananas. Stir until well combined.
Fold in the rolled oats, chopped nuts, and dried fruits, ensuring all the ingredients are evenly distributed.
Transfer the mixture into the lined baking tin and spread it out evenly, pressing down with the back of a spoon to compact it.
Bake in the preheated oven for 20 minutes, or until the top is golden brown and firm to the touch.
Remove the flapjacks from the oven and allow them to cool in the tin for 10 minutes. Then, transfer them to a wire rack to cool completely.
Once cooled, slice the flapjacks into 8 equal bars and store them in an airtight container for up to 5 days.
