Grate the Havarti cheese and set aside. This ensures it melts evenly in the fondue.

In a small bowl, mix the cornstarch with 1 tablespoon of white wine until it forms a smooth slurry. Set aside.

Peel the garlic clove and cut it in half. Rub the inside of a fondue pot or a medium-sized saucepan with the cut sides of the garlic to infuse the garlic flavor, then discard the garlic clove.
