Preheat a panini press or sandwich grill to medium heat.
Slice the gluten-free French bread loaf in half lengthwise and then cut horizontally to create two sandwich bases. You will have four pieces.
Generously spread yellow mustard on the cut side of each bread piece.
On the bottom slice of each sandwich, layer two slices of dill pickle, 2 ounces of sliced ham, 2 ounces of roast pork, and 1.5 ounces of Swiss cheese.
Place the top half of the bread loaves on the filled sandwiches.
Spread 1 tablespoon of butter on the top exterior side of each sandwich.
Place the sandwiches butter-side down on the preheated panini press.
Spread the remaining butter on the now top side of the sandwiches.
Close the panini press, and cook the sandwiches until the bread is golden brown and crispy, and the cheese has melted, approximately 5 to 7 minutes.
Carefully remove the sandwiches from the grill, cut in half diagonally, and serve hot.
